Recipe - Biscuits

One cup starter
2 large eggs
1/4 cup EVOO
dash sea salt
1/2 cup grated cheeses (optional, but yummy)
Sugar to taste (starter may already be sweet)
Unbleached flour (dough should be sticky)

Mix together all except the flour. Taste the batter at this point. (Yes, the eggs are raw. If they looked or smelled bad, don't use them.) Add a tablespoon or two of sugar if needed. You want it to be slightly sweet. Stir in flour until dough is thick, gloppy, and kind of sticky. Plop dough on an oiled insulated backing sheet to make nine biscuits. Bake at 350 F until lightly brown. Eat while hot.

Levening options:
If you have time, put biscuits (on the sheet) it in a warm place for about an hour and they will rise a bit. Once they get hot, the steam will do the rest.
If you are in a hurry, add about one teaspoon of baking powder to the first cup of flour. They will be ready to back immediately.
