One cup starter
½ cup applesauce
cinnamon to taste
sugar to taste if needed (Well fed starter is already sweet enough)
¼ cup EVOO
1 cup finely ground whole grain spelt
½ teaspoon baking soda
stir with wire whisk, thinning as necessary with water
Note that pancakes are toasted, not fried.
Good food takes time; turn the burner down.
Flip when top glossy shine turns satiny.
Great with or without toppings, but please don't use pole syrup on these wonderful cakes.
